Disperse Neocel® and Xanthan gum with high shear mixer (5000~7000rpm) in water for 10 minutes.

Add sugar, salt and MCC into the mixture, then mix for 5 minutes.

Slowly add vinegar, potassium sorbate solution and lemon juice, then mix for 5 minutes (1500 rpm).
